Oatmeal Raisin Lard Cookies

Ingredients

2 cups all-purpose flour

2 cups rolled oats

1 cup sugar

1 tsp ground allspice

1 tsp ground cinnamon

1 tsp ground nutmeg

¾ tsp salt

1 tsp baking soda

3 large eggs
Directions
Sift together 2 cups all-purpose flour, 1 tsp. ground allspice, 1 tsp. ground cinnamon, 1 tsp. ground nutmeg and ¾ tsp. salt.
Combine in a separate bowl 2 cups rolled oats, 1 cup sugar, 1 cup boiling lard, ½ cup warm water, and 1 tsp. baking soda.
Let sit for a minute to allow the lard to cool and the oats to soften.
Mix in 3 large eggs.
Stir in the sifted dry ingredients.
Fold in half a package of raisins and some coarsely chopped walnuts.
Adjust consistency adding up to ¼ cup more flour if the dough isn’t stiff enough.
Bake at 375°F for 10 minutes.
