AIP Pineapple Chicken

If you’re a fan of sweet and sour chicken you’ll love this tangy, protein rich meal! It is delicious and rich and should be served over an AIP rice alternative.
Ingredients

2 lbs Chicken Breasts, cubed

2 TBS Avocado Oil

4 Cloves Garlic, minced

3/4 C Coconut Aminos

1/8 C White Vinegar

¼ C FOND Bone Broth Spring Clean

2 TBS Honey
-
1 TBS Avocado oil

1 - 2 TBS Arrowroot Powder (depending on how thick you like your sauce!)

2 Cups Pineapple (see below)

1 Gutted Pineapple for Garnish

2 Chives, chopped
Directions
In a dutch oven, heat the avocado oil and brown the chicken pieces in batches, turning to cook evenly. Set aside in another dish.
Add the garlic, coconut aminos, vinegar, bone broth, honey and oil, combine over medium heat and whisk in the arrowroot powder. Add in the sliced pineapple and browned chicken and cook for 25 - 30 minutes or until the pineapple is tender. Give it a good stir, and spoon into the prepared pineapple dish. Garnish with a few more chives and enjoy!
