Bone Broth Queso

Ingredients

2 Tbsp butter or tallow

2 Tbsp all-purpose flour (can sub arrowroot or tapioca flour for grain-free!)

4 oz mild chiles (feel free to spice it up, but these are kid-friendly)

Pinch of taco seasoning

8 oz Monterey jack cheese (can sub Colby if desired)

1 jar of FOND’s Nopal & Cilantro Bone Broth (could also sub an unflavored FOND variety if preferred!)

Directions
Start by melting the butter or tallow in a large saucepan. We like to use one with 2-inch sides to avoid spillage, but even a small saucepan will work for this.
Add the flour once the fat has melted and whisk together, allow to cook for 2 minutes.
Now add the green chiles, again allowing the mixture to thicken slightly.
Next add the cheese, whisking to melt it in, and very slowly add the jar of bone broth, whisking continually.
Once everything is combined, remove from heat and stir in the chopped cilantro!
If your queso is not as thick as you want, allow it to cook on low longer so that more liquid can evaporate out.
Recipe Note
Cowboy Queso (Variation):
Add ½ cup of guacamole and ½ cup of ground beef to a large bowl, pour the queso over and enjoy!
PRO TIP:
Queso have clumps? DO NOT FEAR! Throw it into a blender on high until it is a silky smooth consistency.
