Butternut & Rosemary Mop Sauce

Ingredients

1 Tbsp bacon fat (butter or tallow work too!)

½ medium onion, small diced

3 cloves garlic, minced

¾ cup whole raw cranberries

½ cup pomegranate juice

¼ cup apple cider vinegar

¼ cup honey
-
1 small chipotle pepper in adobo (omit completely if you don't want any heat)

1 cup ketchup

Juice of 1 orange

1 Tbsp worcestershire sauce

3 drops liquid smoke (optional)

Salt and black pepper, to taste
Directions
In a medium saucepan on medium-high heat, add the bacon fat. Once the bacon fat has melted, add the onion and garlic. Sauté for 3-5 minutes, or until the onion becomes translucent.
Add in the rest of the ingredients and combine well. Let the ingredients come up to a boil, and then immediately reduce to a simmer.
Allow to simmer, stirring occasionally, for 30 minutes.
Once done, puree the mop sauce in a blender until it is smooth. When the sauce is hot, you may want to do this in small batches.
