Cranberry Macroons

Ingredients
- 4 cup shredded coconut

¼ cup tapioca flour (or gluten-free blend)

1 cup organic cranberries, chopped
- 2 tsp orange zest
- 2 7-oz cans of coconut condensed milk
- Sprinkle of salt
Directions
- Mix coconut and flour together, add cranberries and orange zest. Combine with condensed milk and a sprinkle of salt.
Scoop onto prepared baking sheets lined with parchment paper, bake at 325F for 20 minutes.
