Garlic Herb Marinade with Lamb Chops

This bone broth marinade is versatile and delicious. It perfectly compliments the sometimes gamey taste of lab. This marinade also scales easily, so if you have more meat, just up the ingredients! Using ¼ cup of marinade per lb of meat is a good rule of thumb!

Ingredients

1/4 cup FOND’s Lemon & Garlic Bone Broth

1/4 cup Extra Virgin Olive Oil

2 sprigs dill, roughly chopped

2 sprigs thyme, roughly chopped

1 stalk chive, roughly chopped

1 clove garlic, roughly chopped
-
4 peppercorns
-
Sea salt to taste

4 lamb chops
-
2 Tbsp FOND’s Pure & Unflavored Tallow
Directions
Put all ingredients in a blender and salt to taste - since this is a marinade, you want it to be on the saltier side.
Coat chops in the marinade, place in an airtight container and let sit overnight.
Take out the chops roughly 30 minutes before cooking. You want them at room temperature so they cook quickly.
In a cast iron skillet, turn the heat to medium high and add the tallow. Once the tallow in the pan is warm, add the chops and cook 1 - 2 minutes per side depending on how done you like them!
Serve immediately and enjoy!
