Nourishing Watercress Soup

Ingredients

2 cups FOND’s Lemon & Garlic Regenerative Chicken Bone Broth
- 1 shallot, diced

2 small russet potatoes, peeled and sliced thin
- 2 bunches watercress, chopped, including stems

½ heavy cream
- Salt to taste
- Dash of black pepper
Directions
Pour the bone broth into a large pot and bring to a boil. Add the shallots and potatoes to the bone broth, cover, and cook for 5 minutes. Lower the heat and add the watercress, salt, and pepper. Cover again and cook for another 6 to 8 minutes, or until all the ingredients are tender.
- Purée the soup with an immersion blender or in a blender and add the cream, serve immediately!
