Pour the bone broth into a large pot and bring to a boil. Add the shallots and potatoes to the bone broth, cover, and cook for 5 minutes. Lower the heat and add the watercress, salt, and pepper. Cover again and cook for another 6 to 8 minutes, or until all the ingredients are tender.
Purée the soup with an immersion blender or in a blender and add the cream. Serve immediately!
