Ingredients
- 1 shallot, diced
- 2 small russet potatoes, sliced thin with a mandoline
- 2 bunches watercress, chopped, including stems
- Small cube-sized piece of fresh ginger, grated
- ½ cup coconut milk, cream or canned
- Salt to taste
- Dash of black pepper
Directions
Pour the bone broth into a large pot and bring to a boil. Add the shallots and potatoes to the bone broth, cover, and cook for 5 minutes. Lower the heat and add the watercress, salt, ginger and pepper. Cover again and cook for another 6 to 8 minutes, or until all the ingredients are tender.
- Purée the soup with an immersion blender or in a blender and add the cream, serve immediately!
