Pear & Pomegranate Crisp

4 pears, peeled and cut into cubes

1 cup pomegranate seeds

1/4 tsp salt

Zest of 1 orange

1/2 cup local honey

1 tsp vanilla extract

2 Tbsp pomegranate juice

1/2 tsp xanthan gum

1/2 cup butter, softened

3 Tbsp local honey

1 cup pecan halves

2/3 cup coconut flakes, unsweetened

3/4 cup pecan flour (or almond flour. We don't recommend coconut flour here)

2 tsp cinnamon

1 tsp nutmeg

1/2 tsp allspice

1/2 tsp salt

Directions
- Preheat the oven to 350 degrees.
Grease a small to medium baking dish and set aside.
Combine the pears, pomegranate seeds, salt, orange zest, honey, and vanilla extract in a large bowl.
In a small bowl, combine the bone broth with the xanthan gum. Whisk well until the xanthan gum as fully dissolved, and then add this mixture to the pear filling. Combine well again, and then add the mixture to the baking dish.
Add all of the topping ingredients to a food processor and pulse until combined and crumbly.
Evenly crumble the topping over top of the pear filling.
- Bake for 35-40 minutes. Once out of the oven, allow to cool for 30 minutes before serving. Serve with whipped cream or your favorite vanilla ice cream!
