Quick Italian Wedding Soup

Traditional Italian wedding soup features tender meatballs that are not conducive to a quick, nourishing meal on a busy night.
But this incredibly delicious variation is true to the flavors AND on the table in less than 30 minutes!
Ingredients

1 Box Pearl couscous (OR if gluten free Arborio rice)

1 FOND jar of water

2 Sprigs oregano, finely chopped

2 Sprigs fresh parsley, chopped

2 Sprigs fresh thyme, chopped

1 Lemon, zested and juiced

3 Carrots, peeled and sliced

1 Package sweet Italian sausage, sliced into coins

1 Cup of spinach, sliced into ribbons
Directions
Heat all the ingredients except the sausage and spinach in a Dutch oven. Bring to a boil and let simmer for 15 - 20 minutes or until carrots are tender.
Add the sausage and spinach - cook for 5 more minutes.
