2 lbs Boneless Skinless Chicken Breasts, cut into bite-sized pieces

2 TB Yellow Curry Spice

2 teaspoons Freshly Grated Ginger

2 Cloves Garlic, pressed

1 TB Arrowroot Powder

1 Can Organic Coconut Milk

1 Jar FOND Bone Broth Liquid Light

1 teaspoon Fish Sauce

1 Tablespoon Lime Juice

Rice Alternative (such as cauliflower rice)

Optional: Some folks like their curry a little sweeter. To safely sweeten this recipe, soak 2 pitted dates in warm water, remove from warm water and place in the vitamix with the coconut milk until well blended. Then move on with the recipe as directed.
Directions
Grab a cast iron skillet, add the avocado oil on medium heat. Cook the chicken until browned on all sides. Set aside in a dish.
Using the same pan, whisk in the curry spice, grated ginger, garlic and arrowroot powder whisk until combined. Add the coconut milk and bone broth slowly and continue whisking until thickened (about 5 - 7 minutes). Add the chicken back in, cover and cook until it is heated through.

Serve immediately over rice alternative. Garnish with raisins, diced green apples, shredded coconut, freshly chopped cilantro and freshly cut limes.
