AIP Bone Broth Chicken Curry

2 Tbsp Tallow (We love our Turmeric & Black Pepper Tallow for this!)

2 lbs Boneless skinless chicken breasts, cut into bite-sized pieces

2 Tbsp Yellow curry spice

2 tsp Freshly grated ginger

2 Cloves garlic, pressed

1 Tbsp Arrowroot powder

1 Can organic coconut milk
-
1 Jar Turmeric & Black Pepper Bone Broth

1 tsp Fish sauce (we love Red Boat!)

1 Tbsp Lime juice

Rice alternative (such as cauliflower rice) or sub white rice if not following the AIP diet

2 Dates, pitted. **This is optional (see note in the directions below)
Directions
Grab a cast iron skillet and add the tallow on medium heat. Cook the chicken until browned on all sides. Set aside in a dish.
Using the same pan, whisk in the curry spice, grated ginger, garlic, and arrowroot powder. Whisk until combined. Add the coconut milk and bone broth slowly and continue whisking until thickened (about 5 - 7 minutes). Add the chicken back in, cover, and cook until it is heated through.
Optional: Some folks like their curry a little sweeter. To safely sweeten this recipe, soak 2 pitted dates in warm water, then remove them from the warm water and place in a blender with the coconut milk until well-mixed. Then move on with the recipe as directed.
Serve immediately over rice alternative. Garnish with add-ins of your choice. We love raisins, diced green apples, shredded coconut, freshly chopped cilantro, and freshly cut limes.
