Sausage gravy brings me back to when I spent the summer in Pennsylvania cooking at a hunting and fishing lodge. We made it every morning for customers and we would always run out! It truly is a crowd-pleaser.
Hearty and comforting, we decided to use our customer darling, Youth Tonic in this dish. The shiitake mushroom, sage and shallot combination carries the sausage so well and takes this gravy to a whole new level.
And as an added bonus, this gravy can help your skin! Yes! The kojic acid in shiitake mushrooms prevents the excess formation of melanin, which may lead to brighter, tighter, fresher skin.
We served this gravy over some delicious biscuits from Grain Free Haven, here in San Antonio! Also, adding a sunny side up egg, some avocado and broccoli makes this entire plate a flavor explosion!
Ingredients

1 Pound Pork Breakfast Sausage

1 Cup Youth Tonic

4 oz. Cream Cheese

½ Cup Heavy Cream

½ Teaspoon Salt

1 Teaspoon Black pepper

½ Teaspoon Hot Sauce
Directions
In a saute pan, begin browning the breakfast sausage. Once browned, add in the Youth Tonic and heavy cream, and bring to a boil. Reduce to a simmer for 5-7 minutes uncovered.
Turn the heat down to low. Add in the cream cheese, and gently stir it in to incorporate and thicken. Add in the salt and pepper and hot sauce. Taste for seasoning and serve warm.
Serve with biscuits to make biscuits and gravy with a sunny side up egg, or on top of scrambled eggs with cheese! Super filling and yummy.
