Liquid Light and Carrots are a match made in heaven!
Add maple syrup, some warm spices, and butter and you've got an amazing side dish to any holiday gathering.
1 Pound Carrots, peeled and sliced ¼ inch thin
1 Cup FOND Liquid Light
½ Teaspoon Ginger
½ Teaspoon Cinnamon
1 Tablespoon Maple Syrup
½ Stick Butter, cubed
Salt and Pepper, to taste
Fresh thyme leaves, to garnish
In a large sauté pan, add the carrots, liquid light, ginger, cinnamon and maple syrup. Bring the heat up to a simmer and cook the carrots for approximately 10 minutes, or until just tender.
Turn the heat up to high, and let the liquid reduce until it glazes the carrots. Take the pan off the heat, and add in the butter, and stir until melted. Season the carrots to taste.
Garnish with fresh thyme leaves.
