Nothing screams falling leaves and cooler weather like a delicious Pumpkin Waffle breakfast! These pumpkin waffles made with FOND's Liquid Light will have you ready for a day at the pumpkin patch.
Ingredients

1 Cup Pumpkin Puree

½ Cup FOND Liquid Light

2 Tablespoons Melted Coconut Oil

4 Large Eggs

4 Tablespoons Maple Syrup

2 Teaspoons Vanilla Extract

1 ½ Cups Almond Flour

1 Tablespoon Pumpkin Pie Spice

2 Teaspoons Xanthan Gum
Directions
Preheat your waffle iron.
Whisk together the pumpkin puree, bone broth, coconut oil, eggs, maple syrup, and vanilla extract in a mixing bowl.
Slowly incorporate the almond flour, pumpkin pie spice and xanthan gum into the wet ingredients.
Let the batter sit for 10 minutes to allow it to rest and thicken slightly.
Spray your waffle iron with a little nonstick spray. Ladle the batter into the waffle iron, being careful not to overfill it. Close the waffle iron and cook until lightly golden brown. Cooking times may vary, but it should take about 4-6 minutes on average.
Top with whipped coconut cream, ghee, maple syrup, the options are endless!
