Soupe au Fromage (Cheese Soup) is our take on creating a nourishing soup that is so luxurious and filling.
We use Liquid Light in this recipe because the turmeric and thyme notes really play well with cheddar cheese and caraway. We added additional turmeric to the recipe to bring out the color of the cheese, and you can't deny all the anti-inflammatory properties in this really makes it a powerfully delicious soup!
Garnishing the soup with Smoked Chardonnay Apple Sausage from Trader Joe's (our favorite) is a wonderful addition. The smoky-sweet flavor of the sausage compliments the savoriness of the soup. We also like to add green onions, because they are bright and fresh!

In a medium saucepan on medium heat, melt the butter and add in the onions, carrots, celery, and garlic. Sauté for about 15 minutes, or until the veggies become tender.
Add in the Liquid Light, caraway seeds, thyme, turmeric, half and half and heavy cream. Let simmer for 10 mins, being careful not to scorch the bottom of the pan.
With the soup off the heat, slowly whisk in the cheddar cheese a little at a time until it is all incorporated and smooth. Blend all ingredients together in a food processor until very smooth.
Serve with toasted bread, or on its own with some sliced sausage and green onions.
