Waking Up With Spur
A showstopping combination of beets, poblano and serrano, I love using The Spur in soups, stews and in any other way I can imagine. But by far my favorite ways to use it is warmed to a simmer, poured over freshly sliced avocado and paired with homemade pico-de-gallo (fresh salsa) or simply chopped cilantro.
Sometimes the best things in life are just simple.

Ingredients
- 1 ripe avocado
- Fresh pico de gallo (fresh cilantro will do)
- 1 jar of Spur
Preparation
- Warm a jar of the Spur in a saucepan over medium heat.
- Slice a ripe avocado by cutting the avocado in two and removing the pit. Then use a large spoon to scoop out the fruit. The dome should be facing you, slice with a paring knife into thin strips.
- Add a tablespoon of fresh cilantro or pico-de-gallo (tomato, onion, lemon juice, chopped cilantro and salt).
- Remove the broth from the stove and pour directly over the avocado and cilantro.
- Stir and drink up!
